...-a few shakes of grated Parmesan cheese
-mushrooms if you want them

Company Pot Roast by Barefoot Contessa

Prep 20 min …Cook 3 hr 0 min = Total: 3 hr 20 min

Ingredients

1 (4 to 5lb) boneless beef chuck roast or pot roast cut of meat
Kosher salt and freshly ground black pepper
All-purpose flour
Good olive oil
2 cups chopped carrots (4 carrots)
2 cups chopped yellow onions (2 onions)
2 cups chopped celery (4 stalks)
5 large garlic cloves, peeled and crushed
2 cups good red wine, such as Burgundy
1 (28-ounce) can whole plum tomatoes in puree
1 cup beef stock
3 branches fresh thyme
2 branches fresh rosemary
1 tablespoon unsalted butter, at room temperature

Directions
Preheat the oven to 325 degrees F.
Pat the beef dry with a paper towel. Season the roast all over with 1 tablespoon salt and 1 1/2 teaspoons pepper. Dredge the whole roast in flour, including the ends. In a large Dutch oven, heat 2 tablespoons olive oil over medium heat. Add the roast and sear for 4 to 5 minutes, until nicely browned. Turn and sear the other side and then turn and sear the ends. This should take 4 to 5 minutes for each side. Remove the roast to a large plate.
Add 2 tablespoons olive oil to the Dutch oven. Add the carrots, onions, celery, garlic, 1 tablespoon salt, and 1 1/2 teaspoons pepper and cook over medium heat for 10 to 15 minutes, stirring occasionally, until tender but not browned. Add the wine and bring to a boil. Add the tomatoes, beef broth, 2 teaspoons salt, and 1 teaspoon pepper. Tie the thyme and rosemary together with kitchen string and add to the pot. Put the roast back into the pot, bring to a boil, and cover. Place in the oven for 2 1/2 hours, until the meat is fork tender or about 160 degrees F internally. Turn the heat down to 250 degrees F after about an hour to keep the sauce at a simmer.
Remove the roast to a cutting board. Remove the herb bundle and discard. Skim off as much fat as possible from the sauce. Transfer half the sauce and vegetables to a blender or a food processor fitted with the steel blade and puree until smooth. Pour the puree back into the pot, place on the stovetop over low heat, and return the sauce to a simmer. Place 2 tablespoons flour and the butter in a small bowl and mash them together with a fork. Stir into the sauce and simmer for 2 minutes, stirring until thickened. Taste for seasonings. Remove the strings from the roast, and slice the meat. Serve warm with the sauce spooned over it.

Darlene's Grandmother's Italian Tomato Sauce

Ingredients:

4 Tbs Extra Virgin Olive Oil
3 Tbs chopped Garlic
3 Tbs Extra Virgin Olive Oil
4  Large Basil leaves, ripped into pieces
2 Cans Crushed Tomatoes (28 oz)
1 Small Can Tomato Paste
1 Cup Water
½ Cup Red Wine  (only when they had some left over)
3 TBS Grated Pecorino Romano Cheese
1 Tbs Oregano
1 Tbs Parsley
A good Pinch of Hot Pepper Flakes
1 Tsp Salt
1 Tsp Pepper

Directions:

Saute' the garlic in olive oil on medium/high in the bottom of a heavy bottomed sauce pot. Sprinkle with salt and pepper.  After a minute or two stir in the tomato paste, then add the crushed tomatoes, water, red wine, basil, oregano, and hot pepper flakes.

Put a lid on the pot and let come to a rolling simmer. Lower down to a light simmer, stir occasionally and let cook down for at least an hour, the longer the better.

Right before serving, take of the heat and add in the grated cheese. Enjoy!!!

This makes a big batch, it freezes well in an airtight tupperware container.

For more flavor, cook your sausage, meatballs, pork etc...in the pot first, remove the meats, most of the oil and start the sauce from there. Add the meats back in when the sauce is assembled and let them all simmer together.

Meatloaf

Meatloaf is a very popular family dish, simple, not expensive and most kids love it, especially if you cover it in Ketchup or Barbecue Sauce! Our family also likes it topped with a brown beef gravy. Into the mix you can use any of the store brand ready made packets of meatloaf mixes or even cans of soup like french onion, cream of mushroom etc...

Basically, the recipe below is a flexible one. I put in whatever I have in the fridge (red peppers, onions, pickles etc...) This makes a large loaf but remember, Meatloaf is also one of the great leftovers. Slice it up cold and put it in a sandwich with a little mayo and ketchup.

Ingredients:

3 lbs chopped meat (or a mix of Veal, Pork and beef)
2 cups bread crumbs (plain or Italian)
3 whole eggs (generally 1 egg per pound of meat)
1/2 large onion (diced)
1/2 large red pepper (or green pepper)
1 medium carrots (diced)
½ cup Parmesan cheese
1/2 cup of whole milk
2 TBS yellow Mustard
¼ cup Ketchup or barbecue sauce (plus 1/4 cup reserved)
¼ cup Parsley
Salt and Pepper
Herbs and spices of your preference
I use: Cumin, paprika, onion and garlic powder.

Directions:
Preheat the oven to 375 degrees, and lightly grease a over broiler pan. In a large skillet add about 1-2 TBS Extra Virgin Olive Oil, and sauté the onions, pepper, and carrots until tender. Add in all the spices that you prefer last.

Remove from heat. In a large Mixing bowl, mix the meat, sauteed vegetables, breadcrumbs, eggs, cheese, mustard, and 1/4 cup of the Ketchup. Mix with your hands (dig in) or use 2 forks. Mix together well.

Place the mix onto the pan and shape into a loaf. Spread the remaining Ketchup or barbecue sauce all over the whole loaf (top and all sides). Bake about an hour or until the internal temp reaches 160 degrees, let sit 15 mins before serving.
